To roast the beet, preheat oven to 375°F. Wrap the beet in foil and place on a baking sheet. Bake for 30-60 minutes, checking for tenderness with a fork. Once soft, remove from oven and allow the beet to cool. Remove from foil and peel skin off by gently rubbing with paper towel or with hands (wear dish gloves to avoid staining skin)!
